Are you a snacker like me? I love to nibble when I write or travel and often that is a bag of crisps (chips). Why are they so moreish? That is because they are packed with sugars, fats and lots of flavourings.
With the help of the lovely Rachel Kelly and her book The Happy Kitchen, in this video, I show you how easy it is to make her Roasted Cashew Nuts. They are quick and easy and will boost your energy. The cashews are rich in magnesium and vitamin B6. Magnesium is needed to stay healthy. It is important for regulating your muscles and nerve function. It balances your blood sugar levels, and blood pressure too.
Your body cannot make Vit B6, so you must get it from food or supplements. Trading the crips (chips) for nuts is simply a great idea. Vit B6 is needed for the creation of red blood cells and neurotransmitters. That is a big word for the chemicals your body creates. To become happier we need to focus on Dopamine, Oxytocin, Serotonin and Endorphins. (A DOSE of Happiness) These are ALL Neurotransmitters so the Vit B6 will keep all these healthy.
150g plane cashew nuts (organic are the best)
1 Teaspoon of Chinese Five Spice
2 Teaspoons of tamari or soy sauce
2 Teaspoons of Maple Syrup
1. Preheat oven to 170 degrees C
2. Mix all the wet ingredients together in a jug and stir thoroughly throughout the cashew nuts
3. Line a large baking sheet with greaseproof paper, spread out the nuts so they all get cooked. Place them in the oven for 15 minutes, turning them halfway through.
When you take them from the oven, they will be sticky. Immediately stir them to release them from the greaseproof paper and wait until cool.
Give them a go.
If you are looking for other healthy options for wholesome food that is quick, easy and you can snack on, talk a look at how I created a Healthy Bubble and Squeak with sweet potato and red cabbage. It is a Christmas blog but they can be eaten ANY time of year. I keep them in my freezer for when I don't have time to cook.
