Will you need a break from overindulging? For this happy recipe, you don't need to have overindulged. This is packed with taste, nutrition and energy for any time of year.
This recipe is perfect for keeping in the freezer to reduce your time with meal planning and cooking. I do this all the time for both a snack and a meal.
Taken from the book The Happy Kitchen by Rachel Kelly, 'spinach is a great source of Iron and Spelt provides a steady flow of energy' says Rachel.
120g Wholegrain flour, such as spelt, buckwheat or brown rice.
80-100g fresh Spinach
300ml of milk (I use coconut milk and it is delicious!)
1/2 teaspoon of wasabi (or mustard seed)
Filling of your choice. Smoked salmon and avocado is delicious or you could try my favourite cold snack of crushed avocado, chopped tomatoes and lime juice, with a lashing of freshly ground black pepper. My favourite filling for a dinner is with bean chili and freshly made guacamole.
